Crispy Chicken Tortilla Pizzas

Ingredients

  • 2 8-inch (20cm) whole-wheat, high-fiber tortillas
  • 1/2 cup (128g) low-sodium marinara sauce
  • 1/8 tsp crushed red pepper
  • 1 cup (140g) cooked chicken breast, shredded (rotisserie chicken works great here)
  • 2 cups (50g) fresh spinach, coarsely chopped
  • 2/3 cup (75g) part-skim mozzarella, grated

Directions

 Preheat the oven to 425°F (220°C). Arrange the tortillas on a sheet pan and bake until lightly browned, 2–4 minutes. Remove the pan from the oven.

Carefully flip the tortillas. Spread 1/4 cup marinara over each tortilla and sprinkle each with crushed red pepper. Top each with ½ cup shredded chicken. Arrange 1 cup spinach on each tortilla and sprinkle 1/3 cup mozzarella over each.

Bake until the cheese is melted and bubbly, about 5–7 minutes.

Sheet Pan Chicken Fajitas

Ingredients

  • 1 lb (454g) boneless, skinless chicken breast, sliced into thin strips
  • 2 bell peppers, sliced into thin strips
  • 1 large onion, sliced into thin strips
  • 1 tbsp fajita seasoning
  • 1 tbsp olive oil
  • 4 whole-wheat tortillas

Directions

Preheat the oven to 400°F (232°C). In a large bowl, toss the chicken, bell peppers, and onion with the fajita seasoning and olive oil until evenly coated. Spread the mixture in a single layer on a rimmed baking sheet.

Bake for about 15 minutes, or until the chicken is cooked through and registers 165°F (74°C) on an instant-read thermometer and the vegetables are tender.

Switch the oven to broil and cook for 2–3 minutes, until the chicken and vegetables are lightly charred at the edges.

Meanwhile, warm the tortillas in a dry skillet over medium heat for about 30 seconds per side. Serve immediately, topped with the fajita mixture.

Ingredients

  • Cooking spray
  • 1 cup (120g) whole-wheat pastry flour
  • 1 cup (85g) rolled oats
  • 1/2 cup (55g) unflavored whey protein powder
  • 1 ½  tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cups (305g) low-fat milk or plant-based milk alternative
  • 2 large eggs
  • 1/4 cup (80g) maple syrup, divided
  • 1 ½  tsp vanilla extract
  • 2 tbsp melted coconut oil
  • 1/3 cup (56g) chocolate chips
  • 1 1/2 cups (230g) chopped strawberries

Directions

Preheat the oven to 425°F (220°C). Coat a 9-by-13-inch rimmed baking sheet with cooking spray. Place the flour, oats, whey powder, baking powder, and salt in a blender or food processor and blend until finely ground. Transfer to a large bowl.

Add the milk, eggs, 3 tbsp of the maple syrup, and the vanilla extract to a blender or food processor and blend until smooth. Add the wet ingredients to the dry ingredients and whisk until smooth (if the batter is too thick, you can thin it out with an additional 1-2 tbsp milk.) Stir in the oil.

 Pour the batter into the prepared baking sheet and sprinkle evenly with the chocolate chips. Bake until golden brown and a toothpick inserted in the center comes out clean, about 15 minutes.

While the pancake bakes, combine the strawberries and the remaining 1 tbsp maple syrup in a small saucepan. Bring to a simmer over medium heat, stirring frequently and mashing the berries with a wooden spoon until heated through. Keep warm over low heat.

Cut the pancake into 8 rectangles and serve with the strawberry sauce.

Ingredients

  • 1 (14-oz/414ml) can unsweetened full-fat coconut milk, refrigerated overnight
  • 1 tbsp coconut sugar
  • 1 pinch salt
  • 3 tbsp unsweetened Dutch-process cocoa powder
  • 2 drops almond extract
  • 1/4 cup (20g) sliced almonds
  • 1/4 cup (15g) unsweetened coconut flakes

Directions

Open the can of coconut milk and poke a hole through the solid coconut cream in the top of the can. Pour off the liquid coconut water in the bottom of the can and reserve for smoothies.

Put 1 cup of the solid coconut cream in a mixing bowl. Add the sugar and salt and beat with a hand mixer on high until smooth and fluffy, 2 minutes. Set aside 2 tablespoons of the whipped coconut cream in a small bowl. Sift the cocoa powder over the remaining coconut cream, add the almond extract, and beat until incorporated and fluffy.

Spoon the mousse into 4 small (1/2-cup/118ml) ramekins. Dollop the reserved plain coconut whipped cream on top of each mousse and refrigerate.

In a small, dry saucepan, toast the almonds and coconut flakes over medium-low heat, stirring constantly, until golden brown, 1 minute. Sprinkle the mousse with the almonds and coconut immediately before serving.

Ingredients

  • 3 tbsp plain soy milk
  • 3 tbsp nutritional yeast
  • 1/4 tsp curry powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 6 oz. extra-firm tofu, drained, pressed, and crumbled
  • 1/2 cup (90g) grape tomatoes, halved
  • 4 cups (100g) fresh spinach, lightly packed
  • 2 slices whole grain bread, toasted

Directions

In a small bowl, combine the soy milk, nutritional yeast, curry powder, garlic powder, onion powder, salt and black pepper. Whisk to combine and set aside.

Heat a medium skillet over medium-high heat. Spray with olive oil, then add the crumbled tofu. Cook, stirring occasionally, until the tofu is lightly browned, about 6-8 minutes. Add the soy milk mixture, stir to coat the tofu, and cook until the desired “scrambled egg” consistency is reached, 1-3 minutes. Transfer to a bowl and set aside. 

Spray the same skillet with olive oil cooking spray and set to medium high heat. When hot, add the tomatoes and spinach and cook, stirring frequently, until the tomatoes are softened and the spinach is wilted, about 3-4 minutes. Remove from heat. Serve immediately with the tofu scramble and whole grain toast.

Creamy Roasted Cauliflower Soup

Ingredients

  • 1 medium (588g) head of cauliflower
  • 2 tbsp olive oil, divided
  • 4 whole garlic cloves

  • 1 medium onion, chopped
  • 4 cups low-sodium vegetable broth
  • 1 medium (213g) russet potato, peeled and chopped
  • 1 bay leaf
  • 1 cup (244g) plain unsweetened oat or hemp milk
  • ½ tsp freshly ground nutmeg
  • 1–2 tbsp fresh lemon juice
  • 2 tbsp chopped parsley, for garnish

Directions

Preheat the oven to 400°F (204°C). Cut the cauliflower into 2-inch florets and thinly slice the center stalk. On a rimmed baking sheet, toss the cauliflower and garlic with 1 tbsp of the olive oil, plus salt and pepper. Roast until the cauliflower is deeply browned in spots, about 30 minutes.

Meanwhile, heat the remaining tbsp of oil in a soup pot over medium heat. Add the onion and cook, stirring occasionally, until translucent and beginning to brown, about 5 minutes.

Transfer the cauliflower and garlic to the pot, reserving 1/2 cup (about 40 g) of the smallest browned pieces for garnish. Add the broth, potatoes, and bay leaf. Bring to a simmer, then cover, reduce the heat to medium-low, and cook until the vegetables are very tender, about 25 minutes.

Discard the bay leaf. Add the oat milk, then puree the soup with an immersion blender directly in the pot until smooth. (Alternatively, blend in batches in a standard blender, venting the lid slightly to release steam.) Stir in the nutmeg and lemon juice. If the soup is too thick, add warm water to thin as needed.

To serve, ladle the soup into bowls and top with the reserved roasted cauliflower and parsley.

Coconut Pancakes With Mango Puree Recipe

Ingredients

  • 1 cup (165g) mango, chopped
  • 1 tsp fresh lime juice
  • 1/4 cup (30g) coconut flour
  • 1/4 tsp baking powder
  • 1/2 cup (122g) unsweetened vanilla almond milk
  • 1 tbsp coconut oil, melted
  • 1 tbsp maple syrup
  • 3 large egg whites
  • 1 tsp vanilla

Directions

Place the mango and lime juice in a blender and puree until smooth, scraping sides and repeating as needed. Pour into a small bowl and set aside.

In a large bowl, combine the coconut flour and baking powder, whisk to combine. In a medium bowl, combine the almond milk, coconut oil, maple syrup, egg whites and vanilla and whisk vigorously for 1 minute to really incorporate the egg whites.

Preheat a griddle or large non-stick skillet over medium heat.

Stir the egg white mixture into the coconut flour mixture. It will thicken as you stir. When well-mixed, it should be pourable but thick. If it is too thick, stir in another tablespoon of almond milk.

Coat the hot pan with coconut-oil spray. Scoop heaping 1/4-cup portions and drop on the oiled pan, spreading into 4-inch rounds. Cook for about 2–3 minutes on the first side, until the edges look cooked and the top is bubbly. Carefully turn the cakes and cook for another 2 minutes, until puffed in the center and cooked through. Top with mango puree and serve immediately.

Serves: 2 | Serving Size: 2 pancakes with 2 tablespoons of topping
